Galley Group To Debut New Concept, Revival PGH, At Galley Bakery Square

Galley Group, the food hall development and management company, recently announced their newest concept, Revival PGH, located inside Galley Bakery Square. Founded by Ashley McCoy, long-time general manager Bubba’s, Revival PGH will debut May 23 with a made-to-order menu of salads, crepes, and traditional smash burgers, with a focus on French and American flavors.

“I am thrilled to bring the vibrant flavors of French culture and cuisine to the Steel City community with the launch of my very first independent restaurant concept, Revival PGH,” says McCoy. “Collaborating with the Galley Group has been a dream come true and I’m excited to invite our guests to embark on a culinary adventure. My hope is that, much like Pittsburgh has been for me, Revival PGH becomes a warm and welcoming destination for our guests to gather, relax and savor every delicious moment.”

With more than a decade of experience in the restaurant industry, McCoy joined Galley Bakery Square in 2021 as the general manager of Bubba’s. Drawing on her culinary passions and the rich French history in Pittsburgh, she was inspired to create her own unique concept, Revival PGH. The restaurant concept will pay homage to the city’s French roots, from the original settlements in 1750 to the construction of Fort Duquesne.

The made-to-order menu will feature a variety of salads, crepes and traditional smash burgers, including an avocado chicken crepe with mashed avocados, grilled chicken breast, crispy bacon, spinach, cherry tomatoes, and feta cheese topped with a lime ranch dressing; veggie delight crepe with sauteed mushrooms, red onions, red peppers, spinach, fresh basil and topped with cherry tomatoes and balsamic glaze; a filet on buckwheat with a savory garlic buckwheat crepe filled with filet mignon, sauteed spinach, mushrooms, red onion, and topped with a blackberry sauce; a bruschetta burger with a double smash burger served on a toasted brioche bun topped with fresh bruschetta, asiago cheese, and a drizzle of glaze, served with sweet potato fries; and a strawberry banana crepe with fresh cut strawberries and bananas, McCoy’s signature sweet creme sauce, and topped with powdered sugar and a chocolate drizzle. Gluten free and vegetarian menu options will also be available.

Established in 2021, Galley Bakery Square features four unique restaurant concepts, an expansive bar with an innovative beverage program, and indoor and outdoor communal seating for up to 150 guests. Revival will join food hall restaurant concepts such as City Fresh Pasta, featuring simple and delicious Italian food using fresh ingredients and careful preparations; Elevate, featuring exciting twists to American comfort dishes like pot pies, beef stew, fall-off-the-bone ribs, cheese steaks, and chicken sandwiches; and Somi, featuring healthy, beautiful, progressive Asian cuisine inspired by traditional Vietnamese, Japanese, Korean, and Hawaiian flavors and ingredients.
